The people behind the freshness guide

Dare Editorial is a small publication with one subject: what keeps a flavor fresh between the day something is made and the day it is opened. The publisher is a company registered in Tallinn, Estonia, and the stock it knows best is stored and dispatched from Denmark.

Why freshness

We started from a plain observation. Two items from the same production run can arrive in very different condition, and the difference is almost never the recipe. It is the weeks in between: the temperature of the room, the tightness of the lid, the length of the journey. Very little is written about those weeks in plain language, so we wrote it down.

The guide covers the five causes of staleness, packaging and barrier materials, how a refrigerated warehouse is run, condensation, freezing, and how to read a date mark.

Editorial principles

• Explain the mechanism. Every recommendation in the guide comes with the reason behind it, so a reader is able to judge a new situation without us.
• Stay general. The guide is about storage and freshness as such. It does not describe, rate or compare any particular item or maker.
• Claim nothing. No passage attributes a property or an effect to any item, and nothing in the guide is advice.
• Label the diagrams. Charts that are schematic say so in the caption. Figures that are calculated say what they were calculated for.
• Fix what is wrong. Corrections are welcome and are made promptly. The review date on each page shows when it was last checked.

Readers

The guide is written for adults aged 18 and over. The age confirmation at the top of the home page leads to a separate website, which has its own terms and its own privacy policy.

Diagrams

All four diagrams in the guide were drawn for this site. Three are schematic and one is calculated for a single example room, as its caption states.
